Agustí Torello Mata

Sant Sadurní d’Anoia Penedès, Spain Agustí Torelló Mata broke from his family’s traditional occupations of tailors and musicians to create Spain’s unique sparkling wine, Cava. He set up his own winery exclusively to craft Cava in 1950 and set up the first laboratory devoted to wine analysis in 1953. Due to his enthusiasm and vision of the viticulture industry, he soon became a reference point in the production of cava for the growing international market. It is in this spirit that he fostered the creation of the Cava Guild, an organization to promote Cava and educate consumers about the sparkling wine’s unique attributes. Agustí Torelló Mata’s winery is located in Sant Sadurní d’Anoia, the capital of cava and the heart of the Penedès region in Catalonia on the Mediterranean Sea. The Mediterranean and the region’s large geological structures determine the geographic and microclimatic borders of the various subzones that make up the Penedès wine region. Three different mountain ranges and a wide variety of soil types make up at least three distinctive viticultural areas. Soils are a blend of limestone and clay or gravel and calcareous based rocks. The house is dedicated to the traditional varieties of Spanish Cava - Macabeu, Xarel-lo and Parellada. Additionally, as a part of the dedication to Spains indigenous varietals, they cultivate Trepat, a variety similar in style and structure to Pinot Noir and Subirat Parent, an ancient variety unique to the region. The family works without use of chemicals in the vineyards and possesses a significant amount of old vines. Despite highlighting an international spirit in their range of wines, the family’s process in the cellar is clean and holds to the classic methode Champenoise. The wines of Agustí Torelló Mata reflect the personal commitment of a family and team who create internationally acclaimed cavas that retain individual expression and personality.
